Skinny tortilla chips and guacamole – brilliant, right?
Well, before things go any farther, I must get something off my chest, lest you give me credit where none is due. These are not my inventions.
I wish I could claim these Skinny Tortilla Chips and Skinny Guacamole as my own shining creations, but it wouldn’t be right. The guacamole slim-down is a la Bethenny Frankel, and I can’t remember where I picked the chip recipe up. Regardless, the end result is enough of a reduction in calories and fat that I treat myself to a full-tilt margarita (or so). Just call it my little exercise in justification! (Pun intended . . .)
Let’s start with the tortilla chips, which are super easy to make. Just buy corn tortillas, cut into triangles with a pizza cutter.
A little cooking spray and a sprinkle of salt and you are ready to bake! For the crispest chips, make sure they don’t touch on the baking sheet . . .
You’re dying for the guacamole secret ingredient, aren’t you? Sit down. It’s a bit of a shock. The calorie saving hero of this recipe is . . . frozen peas. Yup. That’s right.
Thaw the frozen peas, then puree, and stir the puree into your mashed avocado mixture (I like my guac pretty simple, a little cilantro, lime and salt. Feel free to season to your taste).
The peas also give the guacamole a vibrant green color!
