Cocktail on a stick?  You better believe it!

It’s no secret  that  we Minnesotans take our “stick food” very seriously (it’s an official obsession, per the Minnesota State Fair Wikipedia page!).    As such, it’s no surprise that I’ve been utterly possessed by these “rock candy” effect gelatin cocktails for some time – ever since I first saw them on the wonderful Baker Royale blog, which featured a dazzling Midori Sour version.  The nubby rock candy effect is achieved by setting and dicing part of the gelatin, then binding it with more liquid gelatin– ingenious!  With the 4th of July at hand, entertaining on the calendar, and guests to dazzle, what better time to give Rock Candy Jelly Shooters a patriotic whirl!

The recipe is easy, but does take a little time to put together.  Also, because the gelatin is diced, and then combined, it is much easier to handle if it is able to set and fully bond overnight.  Start a batch after dinner the night before your party.  First, make the gelatins, and pour into separate pans.  Once the gelatin is set, about an hour, dice the gelatin.  (You can dice right in the pans!)

Remove the jigglers from the pan, and mix the colors up as desired.  I usually have one pan containing predominantly blue cubes, and one that contains more red.

Pour the liquid gelatin to about 3/4 of the way up the cubes.  You may have a bit of gelatin left over.  Cut and skewer the gelatin  within an hour or two of serving.

Although the recipe below is an adult version, spiked with flavored rum or vodka, a kid-friendly version can be made by substituting lemon-lime soda (or even just additional water) in place of the alcohol.

Hi sophia1128, check step 6 – you will need four pans to set the gelatin. One each for the blue and red, and two for the white. In step 10, you mix the gelatin cubes as desired in two of the pans. Hope that helps! XO M.

There is a pan with “WHITE” jello but you are using 2 pans one blue and one red. Where does the White come in??? You also say to add the condensed milk portion to the red and blue, but your picture clearly show Pure white, red, and blue. Please help. I think this looks like a cute dessert and I would love to have this at a cookout Alcohol free for the kids but I am not sure how to do the 3 colors with 2 pan and no instructions on the white, unless I am not reading it correctly. Please help.

Confused please help! Pour 3/4 cup of red gelatin into a pan… What about the remaining 1/4 cup? Are u mixing it with 1/4 cup of blue gelatin to get that darker color?! Cuz I see 4 colors, red blue white and darker color.

No fruit added, its just the colors of the red and blue change up a little depending on how much they overlap!

Good catch everyone! The two cups of liquor are added, one cup each, to the red and blue gelatin. I added this to Step 4. Sorry for the confusion! XO Michelle
