In a fit that I like to call creative enthusiasm (and others may call grandiose delirium), I declared August “ Cake Month” on my blog, Jelly Shot Test Kitchen.

My own August birthday may have also come into play.  Regardless of the impetus, visions of tiny jelly shot “cakes” have been dancing in my head for weeks, so clearly the Tablespoon.com gang couldn’t avoid the Double Rainbow Cake Jelly Shot had they tried!  (Luckily, they were all for it!)

Although I’m usually a classic cocktail fan, there are times when a sweet, fun girly drink is just the ticket.  As such, I’ve sustained a high level of excitement about cake-flavored vodka – the taste is unbelievably pastry-like – without adding a sticky, syrupy, gloopy texture.  However, cake-flavored vodka is a fairly recent release.  If it hasn’t yet made it to the shelves of your local liquor store, substitute vanilla or whipped cream flavor and just a touch of amaretto, and you’ll be on your way to confectionery perfection in no time!

These little jelly shots look ornate, but are simple to make –  the most important thing to remember is the timing for each layer.  Let each layer chill until set, but still sticky when touched.  This will ensure a firm bond – i.e. layers that hold together when the jelly shots are unmolded.  (More prep details follow in the recipe instructions below.)

The jelly shots are topped with a touch of frosting – a dollop of whipped cream would also be great – and, of course SPRINKLES are a must, regardless.

My almost 13 year old daughter saw them while I was browsing Tablespoon yesterday and wants them for her 13th birthday party in May…so I HAD to come up with a non-alcoholic version…just sharing in case anyone else needs/wants to make them, as well. I used different packets of Kool-aid (unsweetened) to give “pop” to the flavors! Be careful! too much is pretty zingy! But they are amazingly yummy this way! BTW – I do the same with plain vanilla frosting when I make cupcakes – so many flavors and so much YUM!

For everyone asking for a non-alcoholic version of these, just use all lemonade for the liquid instead of adding the vodka. They wouldn’t taste like cake, but you would get the same layered effect. You might add some of the flavoring syrup they use for coffee drinks if you wanted to give it a specific flavor. Maybe vanilla?

You should probably give it a try with a flavored soda, like a creme or vanilla soda, or even cherry. I haven’t tried this but am thinking something with a little flavor would best replace the lemonade …. XO M.

The green is there – its a limey green and it blends in a bit with the yellow. I was out of regular green and used the green from the neon set! XO M.

Easy removal; warm the bottom / sides (don’t overflow!) of the mini-muffin pan in a tray or sink of warm water for about 10 seconds before removing the jelly shots – they’ll slide right out. :)

I just made some yesturday and they came out delicious but I wanted to add that while your waiting in between the bonding of the jello layers in the fridge the jello you put off to the side might bond itself, just put in the microwave for 15-20 seconds to make it liquid again so it is pourable. : )

Nope – don’t refrigerate. You want the unused colors to stay at room temp. The unused colors may start to set up a bit. If thats the case, pop in the microwave for 10 seconds and stir well. This will get it back to liquid without heating up too much . . . XO Michelle

Regarding prepared lemonade, I probably should have just said “bottled”. The stuff that comes in a bottle or carton and goes straight to the glass. Of course, if you’re super ambitious, homemade would be lovely too! XO

I think coconut milk could definitely be substituted. All you need is something to add a little bit of creaminess, and coconut milk does that in spades! XO

I can find UV Cake Vodka at my grocery stores like Fry’s and Safeway. I also see it at the Walmart Suercenters. Pinnacle has a great Whipped Cream vodka, and Smirnoff just came out with one as well. Smirnoff tends to be the easiest to find in Drug and Grocery Stores.

My local liquor store carries the cake vodka – and its a smaller store, so am assuming its pretty widely available. UV Vodka makes the cake flavor used in the recipe, although have heard of a brand called Cupcake vodka that has some cake-y flavors as well. If you can’t find cake flavored vodka, I think a nice vanilla, or whipped cream (Pinnacle is the brand I believe) would be nice as well, maybe with a touch of amaretto to add a little confectionary flair! XO M.

I don’t think the Torani syrup would work, as it’s a different thickness and might throw it off. You might try other liquids, like ginger ale (for a nice fizz!) or maybe a vanilla flavored milk instead, or even up the amount of lemonade for a non-alcoholic alternative.

Hi there – sweetened condensed milk is the best for adding sweetness and creaminess to a jelly shot!


I used McCormick food coloring – the yellow from the regular assorted, and then the pink, blue and green from the McCormick ‘neon’ set.
