Not much is better than pizza, right? How about mini pizza bites?

With an unusual flavor combination of mozzarella cheese, spinach, spaghetti squash, and bacon, these salty and sweet Spaghetti Squash Pizza Bites are adorable and delicious!

I love that you don’t need many ingredients for these.

Using Pillsbury Pizza Crust and a small circular cookie cutter, cut out circles for your pizza bites. Put a small amount of marinara sauce on each circle and top with cheese. Don’t put too much sauce on each; you don’t want to make the crust soggy!

Chiffonade the spinach and place on top of the cheese. (Note: chiffonade is a fancy word for cutting spinach leaves and other leafy greens into long strips.) Put the cooked spaghetti squash strands (here’s a quick how-to if you’ve never done it) on top of the spinach and dot with crumbled bacon pieces. If you’re not a bacon lover, it will still be yummy without bacon!

Cook the bites in the oven for about 12 minutes at 400 degrees for a perfectly crisp bottom. The bites are puffy and the sweet spaghetti squash adds a great contrast to the salty bacon crumbles and cheesy-tomato-goodness!
