Memorial Day would be nothing without firing up the grill and marinatin’ some meat – don’t you agree?
To prepare for my favorite grilling holiday, I came up with a summery marinade that would be perfect on chicken, pork or beef!
For my Memorial Day marinade, I use 3 of my favorite flavors – Honey, Lime and Cilantro. Sound delish, right? Simply combine the honey, fresh lime juice and chopped cilantro with kitchen stapes of olive oil, salt, pepper and minced garlic and get your marinate on.
I always think chicken absorbs a marinade the best out of all the grilling meats, so I used my fancy Ziploc bag marinating trick and let it soak up the goodness for a few hours before grilling. You can see the full recipe HERE! This chicken would perfect to serve with a Mexican inspired menu – perhaps a margarita or two (or five), and some chips and guac?
