It’s like, schizo-foodia! And I couldn’t be happier.
Is it pizza? Is it cupcakes? Is it Mexican food? Do I use a backhoe?
Yes. Yes. Yes. And duh.
These trans-globular game day snackies are giving me a serious case of the giggle bug. I mean just listen – little cups of pizza dough filled with a mix and match of 7-layer dip ingredients. Aaaaam I kidding? No. No, I’m not.
Make ‘em meaty, make ‘em cheesy, make ‘em beany, make ‘em guacamoley, make ‘em sour creamy. Just make these 7-Layer Dip Pizza cupcakes appear on your tongue over and over and over and watch your life unfold in a truly unimaginable way.
(they. are. good.)
Grab some beef, Old El Paso seasoning, refried beans, and a tube of Pillsbury thin crust pizza dough, some salsa, shredded cheddar, sliced black olives, guacamole, sour cream, and some lettuce!
Brown your meat up all nicely with the Old El Paso taco seasoning packet. I used half. AND, little tip-a-roo: if your beef renders a lot of fat, drain it BEFORE you add the seasoning. That way you’re not draining all that flava flave.
Roll out your pizza dough and cut little circles in it, lawk sew. AND, you can absolutely ball the dough back up, and roll it out again for 10-12 more circles. Boom.
Then spoon a little bit of the refried beans in each cup! You can totally leave some beanless, in case you have any bean-hating guests.
Whip up some guac! (1 avocado, 2 tablespoons fresh cilantro and a good squeeze of lime juice. And a sprinkling of salt.) Or pick up some store-bought. No bigs.
Okay, aaah! I’m already so excited. You bake the little cups for about 9 minutes, and in the MEANTIME, you set up your party table. Arrange all the ingredients in little bowls and what not, so that your guests can assemble their own little 7-layer dippy bites!
I got excited about these things. And then I ate 450. Prooooomise me you’ll 7-layer dip pizza cupcake your face.
Bev wishes she had 450 more. Right now. For more musings, visit her blog Bev Cooks and her Tablespoon profile.
