Cool: Pot of gold under the rainbow. Cooler: Pockets of golden peanut butter inside rainbow sugar cookies!
You’re gonna schlep these Peanut-Butter Filled Rainbow Sugar Cookies to absolutely every party you go to from now on.
But how can you possibly make them, you crazy-busy person, you? After all, you’ve got people to see, stuff to do and places to go.
We hear ya. But this is soooooo fuuuun. And because it’s basically like playing with Play Dough, you’ll get a whole therapist’s session worth of de-stressing (not DIStressing!) when you make ‘em, too.
I’m taking you by the arm right now and coaxing you to check this out … don’t make me grab you by the ear lobe.
Start with a Betty Crocker Peanut Butter Cookie mix made into PBD (peanut butter dough — stay with me…)
The dough is nice and soft, so roll it into 48 little balls. If you’re Type A like me, these nice neat rows will soothe your soul.
Place the tray into the fridge and let’s move on…
Snap up your Betty Crocker Sugar Cookies mixes (you’ll need 2 to tango this party-sized recipe).
Make up the sugar cookie dough and divide it into 5 balls — or however many colors you want to use.
Collect your food colors and sprinkles. I used regular yellow food coloring, neon green, neon pink, neon blue and neon purple for this batch, but choose whatever hues make you happy.
Add several drops of food color to the first dough ball and knead it until the color is uniform.
Add food color a few drops at a time to the first dough ball, kneading after each color addition, until you get the intensity you want. Continue with the rest of the colors until you have a bunch of brightly colored dough balls.
If you don’t want hands to look like they’ve been tie-dyed (which is way fun — js), drop the dough ball into a large Ziplock bag and knead it in there.
Pinch a small amount of dough from the first sugar-cookie ball and pat it into a circle in the palm of your hand. Add one of the chilled PB balls to the center of the colored dough circle. Yah, they’re buttery alright…
Wrap that PB ball with the colored dough, rolling it between your palms to make a nice round ball.
Roll the ball in similarly shaded sugar, sprinkles or jimmies if you’re into bling! (Plain sugar works, too.) Set it on an ungreased baking sheet.
When you’re done, you’ll have a few sheets that look like this. Chill each sheet for 15 minutes before baking.
Bake at 375 for 8 or 9 minutes. Remove from the oven and lightly tap the tops with the bottom of a glass to flatten them. Don’t squish or smush them … just tap ‘em slightly to take the bump off the top if there is one.
Let the cookies cool 2 minutes on the baking sheet before removing them to a cooling rack to cool completely.
