@Anonymous depends what part you want to make gluten free. I think you could make the casserole gluten free. Make a slurry with cornstarch and water and then stir that into the dish. Don’t just stir straight cornstarch in or it will be lumpy.

@Anonymous. I just used vegetable stock instead of chicken or turkey stock and didn’t use any sausage at all. I didn’t really sub it with anything, just left it out, but you could definitely toss in some apples. That sounds great!
