It’s National Popcorn Day!  I know it’s not a major holiday but let me tell you that if we had popcorn for at least one meal a day, my kids would be seriously happy.

I confess that on nights my husband is working late, my kids often request popcorn and smoothies for dinner (and they get it!). So, we are celebrating National Popcorn Day in a fun, bright way with Colorific Caramel Popcorn!

The fun colors come from using unsweetened powdered drink mix, you could use as many or few colors as you want.  TIP: Make it in team colors for your next football party. My kids loved the bright colors and the fruity flavors!  Simply make a syrup on your stove.

Now for the magic part, add some baking soda. This makes your syrup “grow”! It becomes very puffy, which is why it’s a good idea to use a large pot for making this recipe (and with adult supervision).

Mix with air-popped popcorn and unless you’re a big fan of chewy popcorn, bake it in the oven for awhile so the syrup will harden.

We made several batches in bright colors and then served it up in old-fashioned candy jars with scoops for easy snacking.  We also had fun rainbow-colored bags on hand so our friends could take home some of the fun!
